Gluten sensitivity is growing...at such a rapid rate that schools, hospitals, and other institutions need clear, comprehensive education on preparation and service of safe meals for those with celiac disease and non-celiac gluten intolerance. Restaurants, cafes, and coffee shops also need to increase their awareness of gluten-related food safety concerns, from the supplies they order, to the cooking environment, to proper service.
As an experienced RN, health educator, and cooking instructor, I have the necessary tools to help businesses become more gluten-aware. And, as a former pastry chef, I have experience behind the kitchen doors, too.
I will be speaking at the Le Cordon Bleu (Portland) November 4th on food-safety awareness, gluten intolerance, and gluten free baking.
